Francisco Rocha Antunes was a chef for a day.

As part of the Chefs in Property event, organised by APPII – the Portuguese Association of Property Developers and Investors, in partnership with Cosentino Portugal, Francisco Rocha Antunes, chief executive of MOME Living, was a chef for a day. He was asked to choose a dish, and he had no hesitation: tripas à moda do Porto [Porto-style tripe].

 

In the days of the conquests, the people of Porto supplied the ships with all the meat in the city. And they were left with the offal. But rather than lament what they lacked, they turned what remained into a dish that is still eaten with pride today, six centuries later. It is, therefore, not just any dish. It is the only one that gives its name to a people. The people of Porto are known as tripeiros, and few cities in the world proudly bear a demonym that stems from what was left over.

 

The show cooking session was led by Chef Cordeiro, a renowned gastronome and regular guest on Portugal’s leading cookery programmes, on 2 July at Cosentino City Porto.
